    A tasty little appetiser or served with salad for a lunch or entree.

    Ingredients
    Serves: 4 

    • 110gms soft goat's cheese
    • 1/3 cup basil leaves, finely chopped
    • 1 garlic clove, crushed
    • 4 large, thin slices prosciutto, halved lengthways
    • 1 char-grilled red capsicum, cut into strips
    • ½ cup toasted pine nuts
    • 1 tablespoon olive oil

    Directions

    1. Combine goat's cheese, basil, pine nuts and garlic in a bowl and season with pepper.
    2. Place prosciutto on a flat surface and place a heaped teaspoonful goat's cheese mixture on one end. Top with capsicum. Roll to enclose.
    3. Heat oil in a non-stick frying pan on medium. Cook parcels for 2-3 minutes each side, until golden and crisp.
    4. Serve warm or cold
    5. **Great drizzled with a splash of Vincotto or Balsalmic vinegar
