    Sliced ham served with an amazing sauce. Be sure not to overcook the ham. Enjoy all the xmas kisses when your loved ones finish licking their lips :)

    Ingredients
    Serves: 6 

    • 2 tblspn extra virgin olive oil
    • 3 lge cloves garlic, finely chopped
    • 2 tblspn combined - fresh rosemary, thyme, oregano & sage
    • 1 stalk lemongrass (flesh finely chopped)
    • 1-2 red hot chillies (finely chopped)
    • 7 black olives pitted (coarsely chopped)
    • 2 medium to large onions
    • 500 mls thai lemongrass curry sauce
    • Left over juices from roast or vegetables
    • 2 red capsicum, cut into strips
    • 3 green capsicum, cut into strips
    • 2 orange capsicum, cut into strips
    • 220g pineapple pieces
    • 1 teaspoon brown sugar
    • Half teaspoon salt
    • 6 pieces of good quality xmas ham

    Directions
    Preparation:1hour  ›  Cook:1hour  ›  Ready in:2hours 

    1. To make the sauce: In a good sized frying pan, add olive oil and brown half the garlic, one third herbs, lemon grass, 1 chili & half of the olives until aroma is fully flowing, then add/brown the onion.
    2. Set aside the contents, but retain all the juices and add to the refrigerated thai green curry sauce with 1 tblspoon olive oil and any left over roast meat juices or vegetable juices laying around . Return sauce to the refrigerator.
    3. Add capsicum (cut into long strips) to the rest of the garlic (newly browned), remaining olives, chilli & remaining herbs to the frying pan, heating vigorously for approx 3 minutes. Turn regularly to beautifully mix & coat the capsicum.
    4. Turn the heat to medium , return all the ingredients to the frypan and add the thai green curry sauce with blend of extra juices added earlier.
    5. Blend well, adding pineapple, sugar and salt.
    6. When it starts to bubble, simmer semi-covered for approx. 45 minutes, stirring every 10 minutes.
    7. Whilst simmering, individually wrap your portions of ham in foil and place in oven to heat for 15-10 minutes on 220 degrees C
    8. when ham is ready place on each plate and cover with the sauce from the frypan... add some chopped English parsley for appearance
    9. Enjoy with your loving family, maybe a beverage or two and wait for the loving kisses to flow when they finish licking their lips :)
