Maxine's Shortbread Stockings

You will need a Christmas stocking cutter. (If you can't find one, substitute stockings for maybe stars or snowmen.)

Serves: 12 

  • 250g soft butter
  • 3/4 cup (125g) icing sugar
  • 1/2 teaspoon vanilla essence
  • 2 1/4 cups plain flour
  • 1/4 cup cornflour

Preparation:40min  ›  Cook:15min  ›  Ready in:55min 

  1. Preheat over to 180 degrees C. Line 2 baking trays with baking paper.
  2. Beat 250g soft butter with 3/4 cup icing sugar and 1/2 teaspoons vanilla until pale and creamy.
  3. Sift the 2 1/4 cups plain flour and 1/4 cup cornflour over mixture. Stir to form a dough. Chill for 30 minutes in refrigerator.
  4. Roll out dough until 4mm thick. Cut out your stockings and place them on the prepared trays.
  5. Cook for 10-15 mins or until pale golden.
  6. Cool on a wire rack.
  7. When cool mix a some icing sugar with a little water and divide into a few bowls. Add a few drops of different colouring to each bowl.
  8. Decorate your stockings with the coloured icing. Leave to set.
  9. ENJOY!!
