Layered Salad

    Use a nice glass bowl for best effect as seeing the delicious salad is almost as good as eating it. Using frozen peas keeps the lettuce fresh and salad will keep in the fridge for a couple of days without the lettuce going brown.

    Ingredients
    Serves: 8 

    • 1 iceberg lettuce
    • 500g frozen peas
    • 6 hard boiled eggs, mashed with mayonnaise
    • 500g grated tasty cheese
    • 3 tomatoes, sliced
    • 2 carrots, grated
    • 1 Continental cucumber, sliced
    • 6 slices bacon
    • For the mayonnaise mixture
    • 1 cup mayonnaise
    • 1/2 cup cream
    • 1 teaspoon garlic
    • 2 teaspoons Dijon or French mustard

    Directions

    1. Cut the bacon into small pieces and cook until crispy, then drain on paper towels until cool. Mix together all the mayonnaise mixture ingredients.
    2. To assemble; shred the lettuce finely and place in bottom of glass bowl.
    3. Add frozen peas.
    4. Gently spoon mashed eggs over peas and level with a spoon or spatula making sure they look nice through the glass bowl. Sprinkle over the grated cheese, then the mayonnaise mixture.
    5. Add sliced tomato then grated carrot then sliced cucumber.
    6. Lastly, sprinkle cooled bacon pieces on top.
