Originally this recipe is from my Dad's Mother and given to my mother, than me. My Mum sent me this recipe on my first Christmas when I moved out of home. I had never attempted to cook anything like this before - and am no expert chef. Yet to my surprise (and my husbands) it turned out perfectly. So easy, so affordable, so delicious...a must have addition to your Christmas Recipes.

Serves: 6 

  • 60g butter
  • 1 cup milk
  • 60g sugar
  • 1 1/2 cup mixed fruit
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons nutmeg
  • 1 level teaspoon bicarb soda
  • 1 cup self-raising flour
  • optional: cap of rum/brandy

  1. Put butter, liquid (including rum/brandy), sugar, fruit and spices in a saucepan. Bring this to the boil, then simmer for a few minutes.
  2. Add in bicarb (will froth) and mix together. Let this then cool slightly.
  3. Add flour. At this point mixture should be quite moist.
  4. Steam in pudding basin for 1 1/2 hours. Water should cover 1/2 the side.
  5. When cool, turn the pudding out and cover well with greaseproof paper.
  6. To reheat this (if cooked the previous day) put the pudding basin in water for 1 hour.
  7. Serve with your choice of custard/cream or ice-cream. All of them! Enjoy.
