    Very good for any occasion, wont last long though. Enjoy. It's the one in the middle with the blue topping.

    Ingredients
    Serves: 10 

    • 2 1/2 crushed weetbix
    • 3/4 cup sugar
    • 1 teaspoon baking powder
    • 175g butter
    • 1 cup coconut
    • 1 cup flour
    • 2 tablespoons cocoa
    • Topping
    • 2 dessertspoons gelatine
    • 2 cups sugar
    • food colouring (your choice-a couple of drops)
    • 1 cup boiling water
    • vanilla essence

    Directions
    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Melt butter and pour over dry ingredients. Mix well. Press into tin and bake at 180 degrees C for 15 mins.
    2. Topping: dissolve gelatine in boiling water, add sugar, vanilla essence and food colouring. Beat till thick and fluffy. Cool. Pour over cookie base while still warm. Sprinkle with sprinkles or coconut.
