Lyn's quick and scrumptious fruit mince tarts

    For this recipe I use ready to cook shortbread tart cases, from the frozen section at your supermarket. I find (papas) brand works for me as they come in packs of 6. You will also need to buy one large jar of Robinsons fruit mince, For the top of the tarts I make a Viennese biscuit and either pipe it on or spread it on with a butter knife.

    Serves: 12 

    • 250g butter
    • 1/4 cup caster sugar
    • 1/2 teaspoon of vanilla
    • 2 cups of plain flour
    • pinch of salt
    • 1 large or to small jars of fruit mince
    • 2pkts of 6 ready to bake shortbread cases

    1. Cream together butter and suger until light and fluffy. Add vanilla and carefully fold in sifted flour and salt.
    2. If you are using a piping bag place all the biscuit mix in, then put piping bag in bottom part of fridge for a few minutes while you are filling tarts.
    3. Place 1 tablespoon of fruit mix in each tart case.
    4. Then pipe biscuit mix on top; I like to cover completely.
    5. Arrange on baking tray at 170 C (fan forced) and cook for 15 to 20 minutes or until golden.
