Microwave Chocolate Pudding

    This pudding whips up in no time in your microwave...great for a quick dessert. Allow time for the pudding to chill. Stir in some chopped bananas before chilling for a nutrition boost.

    Serves: 4 

    • 1/2 cup (110g) white sugar
    • 1/3 cup (45g) unsweetened cocoa powder
    • 3 tablespoons cornflour
    • 2 cups (500ml) milk
    • 2 teaspoons vanilla essence

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. In a microwave-safe bowl, whisk together the sugar, cocoa and cornflour. Whisk in the milk - a little at a time - so the mixture does not have any dry lumps.
    2. Place in the microwave, and cook for 3 minutes on high. Stir, then cook at 1 minute intervals, stirring between cooking times for 2 to 4 minutes, or until shiny and thick. Stir in vanilla.
    3. Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming, and chill in the refrigerator. Serve cold.

    This is a very good quick mousse recipe. We liked it and I will make it again. However it was very sweet. Next time I will cut the sugar in 1/2. We like a more bitter chacolate taste. But that is us. This is a keeper . Thank you DBON.  -  12 Dec 2009

    I made double the recipe, therefore cooked it a little longer in the microwave. Such an easy recipe, no fuss, and a big hit with the whole 6 of us not to mention, everyone got their chocky fix. Added a little more cocoa and reduced the sugar . Some had it served with cream. This one will go in the family favourites recipe file. YUM and thanks for sharing.  -  27 Jun 2012
