Zucchini, Corn and Cumin Fritters

    Yummy zucchini corn fritters - we can't get enough of them. These fritters are light and fluffy with lots of zucchini and fresh corn.

    Serves: 24 

    • 2 cups (250g) plain flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon cumin
    • 1/2 cup (110g) sugar (or to taste)
    • 1/2 teaspoon salt
    • fresh ground black pepper
    • 2 eggs, beaten
    • 1 cup (250ml) milk
    • 125g butter, melted
    • 2 cups grated zucchini
    • 1 1/2 cups fresh corn, kernels cut from cob
    • 125g finely grated Cheddar cheese
    • oil for frying

    1. In a large bowl, stir together flour, baking powder, cumin, sugar, salt and pepper.
    2. In a small bowl, whisk together eggs, milk, and butter. Whisk wet ingredients into dry ingredients. Stir in zucchini, corn, and cheese; mix well.
    3. Heat the oil in a cast iron frypan on medium-high heat. Drop batter by the tablespoonful into hot oil. Fry until crisp and brown, turning once with tongs. Remove to paper towels.

    Altered ingredient amounts. I also only used half the sugar as well and that was plenty, 2 sweetcorn cobs and 2 large corgettes as I didn't have zucchini, gave the right amount of ingredients.  -  23 Feb 2011


    Really easy and went down well in our household, I was especially pleased with my son(20) who said "they weren't too bad" as he has always rather not eaten sweetcorn fritters! Makes a lot of fritter mixture and there will be plenty of mixture left to cook for lunch tomorrow as all tonights ones got eaten! YUMMY Only used half the amount of sugar as well, and 2 sweetcorn and 2 large courgettes as I didn't have zucchini gave the right amount of ingredients.  -  23 Feb 2011
