Zucchini slice - vegetarian

    Serves: 8 

    • 1 cup (125g) flour
    • 1 teaspoon baking powder
    • 4 eggs
    • 125ml vegetable oil
    • 1 onion, chopped
    • 1 kg zucchini, peeled and diced
    • salt and pepper to taste
    • paprika
    • chopped fresh parsley

    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Preheat the oven to 180 degrees C.
    2. Sift flour and baking powder together into a bowl. Lightly beat eggs, and mix them into the flour with the oil. Stir in the onion and zucchini, and season with salt and pepper. Pour mixture into a well-greased 23x33cm baking dish, and sprinkle with paprika and parsley.
    3. Bake in preheated oven for one hour.

    This was really nice, and it still worked using less zucchini.  -  20 Jan 2016


    Amazingly good! Reading the other reviews, blandness seemed to be a problem, so instead of just adding the onion and zucchini raw ,I sauteed it with garlic. I also added 8 oz. of shredded sharp cheddar cheese to the egg mixture. This tasted perfect. Not bland at all!
