Zucchini slice - vegetarian
- 1 cup (125g) flour
- 1 teaspoon baking powder
- 4 eggs
- 125ml vegetable oil
- 1 onion, chopped
- 1 kg zucchini, peeled and diced
- salt and pepper to taste
- chopped fresh parsley
Preparation:15min › Cook:1hour › Ready in:1hour15min
- Preheat the oven to 180 degrees C.
- Sift flour and baking powder together into a bowl. Lightly beat eggs, and mix them into the flour with the oil. Stir in the onion and zucchini, and season with salt and pepper. Pour mixture into a well-greased 23x33cm baking dish, and sprinkle with paprika and parsley.
- Bake in preheated oven for one hour.
