Christmas Cathedral Cake

    This cake is easy to make and when sliced thinly, looks like a stained glass window. I make lots of little cakes in mini meatloaf tins and give them away for Christmas.

    Serves: 20 

    • 1 cup brazil nuts
    • 1/2 cup blanched almonds
    • 1/2 cup cashew nuts
    • 1 cup red cherries
    • 1/2 cup mixed cherries
    • 1 cup glace fruit (I use pineapple and apricots but you can use anything)
    • 1 cup dried fruit (either from one of those pre-mixed bags at the supermarket or mix your own raisins/peel etc.)
    • 3/4 cup flour
    • 1/2 cup brown sugar
    • 1/4 teaspoon cinnamon
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 2 eggs
    • 1/2 teaspoon vanilla essence

    1. preheat oven to 130 degrees C. Mix the nuts, fruit and dry ingredients in a large blow. Reserve some fruit for decoration. Cup the large pieces of fruit and nuts.
    2. Mix eggs and vanilla until thoroughly combined and add to the other ingredients. Mix thoroughly.
    3. Press evenly into a 20cm ring tin or 2 x small loaf tins, lined with sprayed baking paper. Press extra nuts and cherries into the top for decoration.
    4. Bake for 2 hours or until firm in the centre. Cool, and brush all over with rum or brandy. Store at room temperature.
    5. Cut into thin slices.
