Heat oil in a fry pan. Fry the chicken schnitzel until golden on both sides. Remove from pan and set aside on some paper towel.
Mash the avocado adding salt and pepper to taste and spread on one half of the bread or roll. Spread the mayo on the other half. Place the Swiss cheese and chicken on top of the avocado. Place the other half of the bread or roll on top and enjoy.
Very nice simple sandwich. I served it on a large toasted pretzel roll. My hubby and I shared it with a salad and gherkins and a nice crisp white wine. YUM!
