Raspberry Muffins

    I love cooking anything so when asked by my gran kids to make some yummy muffins I came up with these so here is my recipe. Hope you have as much success as me! I have put all ingredients down I used. Special note; do not over mix as it will break up the raspberries. You can also use fresh strawberries, I have used blueberries (frozen) which were fine! Enjoy.

    Makes: 24 muffins

    • 2 1/2 cups plain flour
    • 4 1/4 teaspoons of baking powder
    • 1 teaspoon cinnamon
    • 1 cup brown sugar, lightly packed
    • 300g frozen raspberries or fruit of choice + granny smith apple, grated
    • 1 tablespoon icing sugar ( to sprinkle over raspberries )
    • 2 eggs
    • 300g buttermilk (fat free)
    • 1 dessertspoon softened butter

    1. Put oven on to 200 degrees C.
    2. Grease two muffin tins of 12 muffin capacity.
    3. Line muffin tins with patty pans and spray each one with non- stick spray.
    4. In a bowl sift the flour, cinnamon and baking powder.
    5. Add brown sugar, mix, rub in butter now add apple and raspberries which have icing sugar on them. Add beaten egg and buttermilk. Mix with a large metal spoon. Put into cases bake towards top of oven for 20 min or till just golden, cool 5 mins then turn out.

    Cooking tip

    Slivered almonds can be put on tops of muffins before baking. I have also sprinkled a little white sugar over them as well. Enjoy !
