Pork Meatballs wrapped in Prosciutto

    These delicious meatballs are easy to prepare. You must love garlic. Tip when rolling meatballs wear disposable rubber gloves and spray hands with canola oil spray. There will be less mess and no chance of food contamination. Serve with pasta, salad, or vegetables. or simply with some really nice crusty bread.

    Serves: 4 

    • 500g pork mince
    • 3 spring onions finely chopped
    • 1 cup instant polenta
    • 2 tbs Grated Parmesan Cheese
    • 50g cream cheese with herbs
    • 1 tsp garlic, chopped
    • 8 palm sized pieces of prociutto
    • 1 jar (550g) tomato pasta sauce (I use Dolmio Extra Garlic)
    • 100g grated mozzarella cheese
    • canola oil spray for greasing

    Preparation:30min  ›  Cook:35min  ›  Ready in:1hour5min 

    1. Mix first 6 ingredients together along with 3 tbs of the tomato pasta sauce. Makes into 8 medium sized meatballs and refrigerate for 15 minutes.
    2. Preheat oven to 190 degrees C.
    3. Wrap each meatball in 1 piece of prosciutto securing with toothpicks.
    4. Spray a deep fry pan with canola oil, Spray a shallow casserole dish with canola oil.
    5. Heat fry pan on medium flame and brown meatballs on all sides.
    6. Remove from heat and remove tooth picks
    7. Place meatballs in casserole dish cover with remaining pasta sauce. Cover with mozzarella cheese and bake for 20 minutes until cheese is melted and sauce is bubbling.
