Best Chocolate & Light Chocolate chip cookies!

    Great recipe that I found & adapted from the Cadbury Dark Chocolate Chips packaging. Its been an absolute hit with everyone. My hubby loves the light biscuits with the dark chocolate chips whilst I love the chocolate cookies with the sunflower seed mix. A sure hit with everyone!

    Serves: 10 

    • 250g butter
    • 1 cup brown sugar
    • 2/3 cup castor sugar
    • 2 tsp vanilla essence
    • 2 eggs
    • 3 cups wholemeal self-raising flour
    • Dough A
    • 1 cup Cadbury Dark Chocolate Chips
    • Dough B
    • 1/3 cup cocoa
    • 1 cup Energy Mix
    • (Note: Energy Mix contains a mix of sunflower seeds, pepitas, sultanas, almond slivers.)

    Preparation:30min  ›  Cook:1hour  ›  Ready in:1hour30min 

    1. Preheat oven to 160C.
    2. Beat eggs and set aside. Cream butter, brown sugar and castor sugar until light & fluffy. Add in vanilla essence and eggs. Stir in the flour.
    3. Split dough into 2 lots.
    4. Dough A: Add in cocoa & "Energy Mix". Mix well.
    5. Dough B: Add in dark chocolate chips. Mix well.
    6. Roll teaspoonful of mixture into a ball & place onto a greased baking tray. Using a fork, flatten the cookies, leaving approximately 1 cm between each flattened cookie as it does spread a little. Note that the thinner you press it the crispier it'll be & the shorter you'll have to bake them for.
    7. Bake for about 10 - 15 mins or until baked. Leave on tray to cool for about 2 - 3 mins before removing & putting onto cooling racks to cool completely.

    I love this recipe but I make the whole mix with the coco and the energy mix. Dead easy to make and tastes really rich.  -  13 Nov 2009
