Baked Rice and Bacon

    This is one of the easiest and fastest meals to prepare. It is yum and has less fat. For tomatoes, it is good to use La Gina, because they really cook well in this type of recipe and for rice, its good to use the medium grain by Sunrice.

    Serves: 4 

    • 300g diced rindless bacon
    • 400g diced tomatoes (preferably La Gina)
    • 250g grated cheese
    • 100g bread crumbs
    • 2 eggs
    • 2 tablespoons of olive oil
    • 1/2 cup pitted and diced black olives(optional)
    • 3 cups of calrose rice (I use medium grain by sun rice)
    • steamed chopped baby spinach

    1. Preheat oven at 160 degrees
    2. Boil the rice separately in salt water and set aside
    3. Heat the oil and brown the diced bacon in a saucepan (drain excess oil if any). Mix the bacon, baby spinach, olives, bread crumbs and beat the eggs in. Mix well. Arrange rice and the beacon mixture in layers in a greased deep oven dish. Then finish with the tomatoes on top and sprinkle with grated cheese. bake for 15-20 minutes or until cheese is golden brown.
    4. Serve with a garden salad or steamed veggies. enjoy!
