Heat oil in a deep pot.

Beat eggs and sugar together. Add lemon rind and milk then mix. Add self raising flour and mix.

Place 1/2 teaspoon of mixture into oil. If mixture bubbles and floats to the surface the oil is hot enough to cook.

Once oil is hot. Cook mixture in batches. Using a salad spoon (or a spoon equallying about 3 tablespoons) drop mixture into oil. The mixture should bubble and float to the surface. Once one side is cooked the Jumping Johnnies will automatically turn over.

Once both sides of the Jumping Johnnies are cooked remove and place on paper toweling (for 1-2 minutes) place in brown paper bag with icing sugar. Shake Jumping Johnnies so they are covered in icing sugar.

They will still be quite hot so take care.
