Waffles with Fruit and Caramel Sauce

Orange segments and banana slices soaked in orange juice make a luscious partner to hot, freshly toasted waffles, especially when served with a warm caramel sauce.

Serves: 4 

  • 2 large oranges
  • 1 large banana
  • 2 tablespoons unsalted butter
  • 1/3 cup (60g) brown sugar
  • 3 tablespoons (60ml) cream
  • 8 bought waffles
  • To serve: 4 tablespoons natural yoghurt, optional

  1. Remove the peel and white pith from the oranges with a sharp knife. Holding each orange over a bowl to catch the juice, remove the segments by cutting between the connecting white tissue, letting each segment fall into the bowl. Squeeze the remaining tissue to extract the rest of the juice.
  2. Peel the banana, slice into the oranges, and mix gently together. Preheat the griller.
  3. Melt the butter slowly in a small pan over moderate heat. Add the sugar and stir for about 2 minutes, until it has dissolved. Then add the cream and simmer the mixture gently for about 3 minutes, stirring frequently, until it turns a caramel colour. Remove from the heat.
  4. Toast the waffles according to the instructions on the packet and place on four serving plates. Spoon a quarter of the orange and banana mixture onto each, and pour on the caramel sauce. Add a spoonful of yoghurt, if using, and serve.

These were really good! We loved the combo of the fresh fruit w/ the caramel sauce. These would be over the top delicious w/ homemade waffles, which is how I'm planning on making them next time. I will def be making these again~YUM! Thanks for sharing. - 01 May 2013
