    Try this crumbed version of fried fish. I use snapper fillets but you can use any firm fillets.

    Ingredients
    Serves: 4 

    • vegetable oil for frying
    • 1 egg, beaten
    • 500g snapper fillets
    • 60g (½ cup) dried breadcrumbs

    Directions
    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. In a large heavy frying pan, heat oil to 190 C.
    2. Dip fillets into beaten egg and coat in breadcrumbs.
    3. Gently slide fish into hot oil and fry until golden brown. Drain briefly on paper towels Serve hot with chips and salad.
