Salmon pizzas with yoghurt and dill

    Salmon and thick yoghurt flavoured sauce with dill adds a creamy texture that complements the richness of the fish in this no-cheese pizza.

    Serves: 4 

    • 2 small skinless salmon fillets (about 350g in total)
    • 2 large tomatoes
    • 1 small white or red onion
    • 2 thin 25-cm pizza bases
    • Salt and black pepper
    • 8 sprigs dill
    • ½ cup natural yoghurt
    • To serve: 4 tablespoons mango chutney, optional

    1. Preheat the oven to 220°C. Discard any bones from the salmon, then dice the flesh.
    2. Finely chop the tomatoes and peel and finely chop the onion. Place the pizza bases on baking trays; cover with the tomatoes and onion. Arrange the salmon on top and add salt and pepper to taste.
    3. Bake for 15–20 minutes, or until lightly browned, swapping the trays round half way through.
    4. Put aside a few sprigs of dill for a garnish, then finely chop the remainder and mix into the yoghurt, along with some pepper.
    5. Remove the pizzas from the oven, spoon some yoghurt over each and garnish with the reserved dill.
    6. Cut each pizza into quarters and serve, accompanied by the mango chutney, if using.

    Salmon is quite a fatty fish so the pizzas do not need to be brushed with oil before baking, making this a healthy alternative to conventional pizzas.
