Pandoro is an Italian star-shaped Christmas cake, golden in colour and a light buttery taste. Available from specialty shops or leading grocery chains around the Christmas period. This delicious dessert is simple to make and makes everybody's mouth water.

Serves: 6 

  • 1/4 cup Mascarpone
  • 1/2 cup cream
  • 1 teaspoon muscat
  • 1 tablespoon icing sugar
  • 1/4 teaspoon vanilla extract
  • 6 x 1cm slices Pandoro
  • 3 nectarines, stones removed and thinly sliced
  • 4 cups mixed berries
  • icing sugar, extra for dusting

  1. Place mascarpone, cream, muscat, icing sugar and vanilla in a bowl and beat with an electric hand mixer for 1 minute or until light and fluffy. Lightly toast pandoro slices in the grill under low heat until golden and on each side. Set aside to cool.
  2. Place a slice of pandoro on each plate, spread with the mascarpone mixture and top with nectarine slices and berries. Dust with extra icing sugar.
