Place mascarpone, cream, muscat, icing sugar and vanilla in a bowl and beat with an electric hand mixer for 1 minute or until light and fluffy. Lightly toast pandoro slices in the grill under low heat until golden and on each side. Set aside to cool.
Place a slice of pandoro on each plate, spread with the mascarpone mixture and top with nectarine slices and berries. Dust with extra icing sugar.
