Chicken breast stuffed with stuffing

    A delightful chicken breast stuffed with stuffing to give it a roast feeling. Then its rolled in alfoil and plastic wrap and poached so it also gives it the light feeling. You can fry it to brown afterward poaching if you wish.

    Serves: 3 

    • 3 chicken breasts
    • 1 packet of stuffing mix
    • aluminium foil
    • cling wrap

    Preparation:20min  ›  Extra time:20min  ›  Ready in:40min 

    1. Put a pan of water on stove to boil.
    2. Slice chicken breast in half horizontally but not all the way through, so it is one bit of flat chicken. Hit it with a wooden spoon to flatten.
    3. Make up the packet mix stuffing according to its directions.
    4. Spread the stuffing across the sliced breast. Roll the chicken up.
    5. Wrap it tightly in cling wrap then foil over the top of that
    6. Drop the breasts in the boiling water for 20mins.
    7. Pull them out with metal tongs and unwrap and slice like you would slice a loaf of bread.
    8. If you want it brown, just put in the frypan to brown all sides.
    9. Serve with some veg and potato. Enjoy!
