My really really easy biscuits

    20 minutes

I have been cooking this really easy biscuit recipe since I was in my pre-teens! It was adapted out of an old cookbook my mum had as a teenager called Cookery for Young Australians by M.I. Dawe. There are lots of variations to this recipe and I usually put in 100g chocolate chips after I've finished mixing and stir them in with a spoon. Or I'll cut a glace cherry in half and put it on top before baking.

    16 people made this

    Serves: 12

    • 1 C self-raising flour
    • 1 C plain flour
    • 1/4 tsp salt
    • 1 egg
    • 125g shortening (I use butter)
    • 125g sugar (brown sugar can be used for a richer taste and a darker bikkie)

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min

    1. Preheat oven to 180 degrees C. In a mixing bowl place softened butter and sugar. Mix on high until light and fluffy.
    2. Add egg, flours and salt and mix together until mixture resembles fine breadcrumbs.
    3. Bring mixture together with hands and turn onto lightly floured board to roll.
    4. Roll mixture to about 2cm and cut into shapes.
    5. Bake in moderate oven until brown - about 10 mins.
