    I was trying to make something simple yet "yummy" for my kids lunchboxes. This makes approx 24 patty cake size. If using muffin pan you may only get 12 larger muffins and will need to adjust cooking time.

    Ingredients
    Serves: 12 

    • 2 mild twiggy (salami) sticks, finely sliced
    • 100g shaved ham, finely sliced
    • 100 g grated cheddar cheese
    • 100g grated vintage cheese
    • 100g shaved Parm/Romano cheese (hard and strong flavoured)
    • 200g frozen corn kernels
    • 2 eggs
    • 150 g margarine
    • 1/2 cup milk
    • 1 cup Self-Raising Flour

    Directions
    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. preheat oven to 180- degrees C. Mix all ingredients together until just combined and roll "golf ball" size amounts and place in patty cases in patty cake trays.
    2. Bake for approx 15 minutes in pre-heated oven or until they are golden brown and spring back when lightly pushed in middle.

    Made it vegetarian. Removed the meat and replaced with mushrooms. Worked a treat as the meat wasn't missed at all. - 03 Mar 2010

    Basically you can adjust on salami or you might like to change ingredients to a lower fat content. - 02 Feb 2010
