Three Cheese and Ham Muffins

    I was trying to make something simple yet "yummy" for my kids lunchboxes. This makes approx 24 patty pan sized muffins. If using a muffin pan, you may only get 12 larger muffins and will need to increase the cooking time by about 5-7 minutes.

    Serves: 24 

    • 1 cup (150g) self-raising flour
    • 150g margarine or butter, melted
    • 2 eggs, lightly beaten
    • 1/2 cup (125ml) milk
    • 2 mild twiggy (salami) sticks, thinly sliced
    • 100g shaved ham, thinly sliced
    • 100g grated tasty cheese
    • 100g grated Vintage Cheddar cheese
    • 100g shaved Parmesan or Romano cheese
    • 200g frozen corn kernels

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 180 degrees C. Line two 12-hole patty pan tins with paper cases.
    2. Sift flour into a large bowl. Stir in combined melted margarine, egg and milk until just combined. Gently fold in salami, ham, cheeses and corn until combined.
    3. Divide mixture evenly among paper cases. Bake for 15 minutes or until they are golden brown and spring back when lightly pushed in middle. Serve warm or cold.

    Made it vegetarian. Removed the meat and replaced with mushrooms. Worked a treat as the meat wasn't missed at all.  -  03 Mar 2010


    Basically you can adjust on salami or you might like to change ingredients to a lower fat content.  -  02 Feb 2010
