    A twist on the classically retro prawn cocktail. An easy no cook recipe that will work every time. Kids love it.

    Ingredients
    Serves: 4 

    • 1/2 small iceberg lettuce, shredded (reserve 4 large leaves to serve)
    • 1 tbs lemon juice
    • salt & pepper
    • 300g Angelakis Bros Cocktail Prawns
    • 5 tbs whole egg mayonnaise
    • 2 tbs tomato sauce
    • 1 tbs Worcestershire sauce
    • 1 finely diced spring onion
    • 1/4 finely diced red capsicum
    • 1/4 finely diced green capsicum
    • 1/2 stick celery finely diced
    • 1 tsp celery salt
    • 3 strands saffron
    • 1bs lemon juice
    • 1 finely sliced spring onion for garnish

    Directions
    Preparation:1hour  ›  Ready in:1hour 

    1. Dress shredded lettuce with lemon juice and salt & pepper cover and refrigerate.
    2. In a glass bowl combine: 5 tbs whole egg mayonnaise, 2 tbs tomato sauce, 1 tbs Worcestershire sauce, 1 finely diced spring onion, 1/4 finely diced red capsicum, 1/4 finely diced green capsicum, 1/2 stick celery finely diced, 1 tsp celery salt, 3 strands Saffron, 1bs lemon juice.
    3. Add prawns cover with plastic wrap and refrigerate for 30 minutes
    4. In 4 glass bowls place a lettuce leaf, fill with shredded lettuce, top with prawn and sauce mixture. garnish with spring onion. serve.
