I love watermelon in the summer, it is the perfect snack for a hot, sunny day. I was inspired to make my favourite summer snack into a cocktail. This sweet, fresh, pink hued champagne cocktail is not too alcoholic and great to serve at a barbie. It's best if you can chill the watermelon overnight.

Ingredients

Serves: 6
  • 900g watermelon
  • 250ml of sparkling white wine or champagne
  • 2 tbsp lime juice
  • 1 tsp lime rind, finely grated
  • 2 tbsp of mint to garnish
  • sugar syrup to taste

Preparation method

Prep: 10 minutes
1.
Chill watermelon overnight in the fridge.
2.
Place watermelon, sparkling wine, lime juice and rind and process in the blender until smooth.
3.
Add cooled sugar syrup to taste (to make sugar syrup - 2 parts sugar and 1 part water. Bring water to the boil in a saucepan and add sugar. Remove from heat once sugar is melted, cool and bottle).
4.
Pour into long glasses or martini glasses and serve immediately, garnished with mint springs.
