    This is a very simple cake to make. I bought my fruit mix and orange juice from the supermarket.

    Ingredients
    Serves: 12 

    • 1 kilo of mixed fruit
    • 2 level packed cups of self-raising flour
    • 1 full rounded teaspoon of mixed spices
    • 2 full cups pure orange juice

    Directions
    Preparation:30min  ›  Cook:2hours  ›  Ready in:2hours30min 

    1. Place 1 kilo of mixed fruit mix into a large bowl and mix 2 cups of pure orange juice into the fruit mix.
    2. Stir well, until all juices are mixed thoroughly through; cover bowl with glad wrap and place in fridge overnight.
    3. This allows the orange juices to mix in with the fruit while it is being chilled overnight.
    4. Next day, remove from fridge and then prepare for further mixing . Add in 2 cups of self raising flour & 1 tsp, mixed spices,
    5. Stir thoroughly either by hand or with a cake mixer.
    6. Preheat oven to 150 degrees C.
    7. Prepare 20cm (8") cake tin lined with cooking paper and place contents into cake tin, and bake for 2 hours in preheated oven.
    8. Caution; if top of cake looks like burning, place a sheet of brown paper over top of cake to stop further burning.
    9. Enjoy, it's delicious.
