Christmas baskets

    These baskets are a light & healthy finger food at pre-Christmas parties or served as an entree with a curly lettuce garnish. Being the colours of Christmas, they are always a hit! Quantities depend on size of tins & number required: this makes about 1 doz muffin sized baskets

    Serves: 12 

    • Cooked Turkey breast (approx 500gms diced)
    • 3 spring onions (chopped finely)
    • Good mayo
    • 1 pkt Spring roll wrappers (approx 10sq cm's)
    • 2 Avocados
    • Cranberry jelly

    Preparation:30min  ›  Cook:5min  ›  Ready in:35min 

    1. Spray muffin tins with canola oil.
    2. Place 2 spring roll wrappers across each other to make a star shape & press into muffin tin, spray inside baskets lightly when whole tin is filled.
    3. Place into hot oven for 3-4 minutes until golden.
    4. Remove to cool on wire rack; repeat until all wrappers used.
    5. If not using immediately, store in an air tight container.
    6. When ready to serve layer - in order - a spoonful of chopped turkey breast, a teaspoon mayo, spring onion, chopped avocado then a teaspoon of cranberry jelly on top.
    7. Best consumed within an hour to avoid going soggy!
    8. Garnish platter with herbs eg: coriander for presentation.
