Szechuan Pepper Salmon

    A spice rub of Szechuan pepper, garlic, lime and salt puts a new spin on simple grilled salmon. Delicious and spicy!

    Serves: 2 

    • 1 teaspoon Szechuan peppercorns
    • 2 cloves garlic, coarsely chopped
    • 1/4 teaspoon finely grated lime rind
    • 1/4 teaspoon coarse salt
    • 2 fillets salmon (approx 185g each)
    • 1 teaspoon olive oil
    • 1 tablespoon soy sauce

    1. Preheat the grill and set the tray about 15cm from the grill. Line a baking tray with aluminium foil.
    2. Using a mortar and pestle or spice grinder, grind the peppercorns, chopped garlic, lime rind and salt until the peppercorns are finely ground. Rub salmon fillets with olive oil, then place onto the prepared tray, skin side down. Rub spice mixture onto top of salmon fillets.
    3. Grill until the salmon is flaky and no longer pink in the center, 10 to 15 minutes. Drizzle with soy sauce and serve.

    If these aren't in your local supermarket you can get them from Asian shops or supermarkets.

    This turned out really good. I thought the lime seemed a little odd but it worked perfectly. This had the perfect amount of heat and salt. I did add some dill because I typically always do with salmon. It definitely bumped the flavor up some but I don't think it was completely necessary either.
