Bacon Lettuce and Tomato Salad

    Bacon, lettuce and tomato are a great combination whether you are eating a sandwich or making a salad. Perfect for a weekend lunch.

    Serves: 6 

    • 500g bacon rashers
    • 3/4 cup (190ml) mayonnaise
    • 1/4 cup (65ml) milk
    • 1 teaspoon garlic powder
    • salt and ground black pepper, to taste
    • 1 lettuce, rinsed, dried and chopped
    • 2 large tomatoes, diced
    • 2 cups croutons

    1. Cut the rind from the bacon and cook in a frypan over medium high heat, turning frequently until evenly browned. Drain, diced and set aside.
    2. Make the dressing in a blender or food processor, combine mayonnaise, milk, garlic powder and black pepper. Blend until smooth. Season the dressing with salt.
    3. Combine lettuce, tomatoes, bacon and croutons in a large salad bowl. Toss with dressing and serve immediately.

    Such humble ingredients for such big flavor! Pared down the fat content in the dressing using low fat mayo and 2% milk and added onion powder for an extra boost! Left out the salt as the bacon provided enough without adding extra.... This is a great salad to use up cherry tomatoes that seem to flourish profusely in the summer garden.     I didn't use a whole pound of bacon, just half of the package that was left after I made meatloaf. I used a mixture of fat free sour cream and lowfat mayonnaise and a spring green mix. We all enjoyed this a lot, especially my oldest who has a real thing for bacon. He takes after his mother.
