    A delicious and very interesting mix of fresh mangoes, shallots, coriander and lime. This is a great side salad at a barbecue.

    Ingredients
    Serves: 6 

    • 4 medium mangoes, peeled and cubed
    • 1/4 cup (approx 2 limes juiced) fresh lime juice
    • 2 tablespoons extra-virgin olive oil
    • 1 tablespoon dried red chilli flakes
    • 2 tablespoons chopped fresh coriander
    • 2 tablespoons chopped shallots
    • salt and freshly ground black pepper to taste

    1. Place the mango cubes into a serving bowl. In a separate bowl, mix together the lime juice and olive oil. Season with red dried red chilli, coriander, shallots, salt and pepper.
    2. Whisk briefly, then pour over the mangoes. Stir to coat, then cover and refrigerate for about 30 minutes to blend the flavours before serving.
