    This is a very easy and delicious dish that I like to make as a side dish for barbecues.

    Serves: 6 

    • 2 medium zucchini, quartered and cut into large pieces
    • 4 medium potatoes, peeled and cut into small chunks
    • 1 medium red capsicum, seeded and chopped
    • 1 clove garlic, sliced
    • 1/2 cup dry bread crumbs
    • 1/4 cup olive oil
    • paprika to taste
    • salt to taste
    • ground black pepper to taste

    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Preheat oven to 200 degrees C.
    2. In a medium baking pan, toss together the zucchini, potatoes, capsicum, garlic, bread crumbs and olive oil. Season with paprika, salt and pepper.
    3. Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.

    Very nice recipe. Could be adapted for different vegetables and perhaps some dried rosemary would add to the nice flavour. Will use often as a side dish. - 04 Feb 2010

    Absolutely delicious and easy! I added onion wedges and sliced the potato rather than the small chunks. Will def be making this again. - 01 Jul 2014
