Bocconcini cheese is the main ingredient scrumptious salad. You can substitute the any bitter green leaf like endive or more rocket for the chicory.


Serves: 4 

  • 500g bocconcini (mini mozzarella balls)
  • 8 cherry tomatoes, halved
  • 1 green capsicum, diced
  • 2 stalks celery, diced
  • 1 head chicory
  • 90g coarsely chopped rocket
  • 1 to 2 tablespoons fresh lemon juice
  • 3 tablespoons extra-virgin olive oil
  • salt and freshly ground black pepper, to taste
  • half a bunch fresh basil leaves, chopped

Preparation:15min  ›  Ready in:15min 

  1. In a large salad bowl, combine the mozzarella, cherry tomatoes, pepper, celery, chicory and rocket.
  2. Whisk together the lemon juice and olive oil; pour over the salad and season to taste with salt and pepper. Toss until all the ingredients are thoroughly coated with the dressing. Sprinkle the basil over the salad and serve immediately.

Altered ingredient amounts. I only changed it a little. I find Raw Green Capsicum a little bitter, so I suggest either Red, Yellow or Orange Capsicum for more Flavour. I also substituted Baby Cos Lettuce for the Chicory [I don't like the bitter taaste]. Also, it needed Garlic! - use Roasted Garlic if you have it, but Roasted OR Raw will be O.K.! ~ GREAT SALAD !!!! - 07 Mar 2010


It was a fairly good salad, but dind't strike me as out of the ordinary. I was dissappointed in the bocconcini, the taste was pretty bland. Of course it could have been the particular product and another one may have been tastier. - 08 Oct 2008
