Serves: 4 

  • 4 potatoes
  • 6 garlic cloves, well smashed
  • two large sprigs of rosemary, each about18-20cm long
  • olive oil to drizzle over all the potatoes

Preparation:10min  ›  Cook:45min  ›  Ready in:55min 

  1. Preheat oven to 150 degrees C.
  2. Scrub or peel potatoes and cut each potato in half. In oven dish sprinkle olive oil liberally. Place potatoes into the dish with oil drizzled over them. Add smashed garlic cloves and lots of fresh rosemary. Heat oven to 150 degrees and turn potatoes once during cooking process.

Took shortcuts. I par boil the potato's first and reduce cooking time to half an hour, at about 200 degrees c - 19 Feb 2010
