Pasta with bacon, tomato-cream sauce and pinenuts

    This pasta sauce works well with any kind of pasta i.e. bow pasta, penne pasta, etc. It is fabulous with Latina Fresh Ricotta and Spinach Agnolotti. You can use chicken instead of bacon. It all works well! This recipe is easy and you can't go wrong!

    Serves: 4 

    • 3 Tbs olive oil
    • 1 brown onion (diced)
    • 175g middle short cut bacon (cut into strips)
    • 3 garlic cloves (crushed) - or you can use a similar amount of Gourmet Garden garlic from a tube
    • 2 tsp dried mixed herbs
    • 2 tsp dried basil
    • 1 tsp dried oregano
    • 1 tsp sugar
    • 800-820g (2 tins) crushed canned tomatoes
    • 150ml fresh thick cream
    • Pinenuts (a couple of handfuls, approx, to serve)
    • Fresh parmesan or Kraft parmesan to serve

    1. Bring a large pot of water to the boil.
    2. In a large frypan heat oil, then add diced onion and cook until translucent. Add bacon strips and cook for 7-10 minutes.
    3. Add mixed herbs, basil, oregano and garlic and cook for 1 minutes, add canned tomatoes and sugar, bring to a simmer and turn heat to low. Simmer on low for 20 minutes.
    4. Meanwhile, toast pine nuts in a non stick fry pan until golden. Remove pine nuts from fry pan and place in a ceramic bowl (Do not leave pine nuts in fry pan as they will continue to cook and burn).
    5. Add cream and stir through for 2 minutes, then turn the heat off.
    6. Depending on which pasta you are using, follow packet directions to time it to finish once sauce is cooked. It is better to finish the sauce earlier than overcook or leave the pasta.
    7. Mix together pasta and sauce.
    8. Place into bowls and sprinkle with pinenuts. Serve with either fresh parmesan cheese or Kraft parmesan cheese.

    For a more gourmet pasta dish

    Add semi-dried tomatoes and fresh asparagus. Cut asparagus into 2cm pieces, place in a microwave dish with water, cover and cook for 6 minutes. Add semi-dried tomatoes and asparagus when adding cream.
