My grandpa used to buy huge bags of these biscuits and hide them so he could surprise us and give us one every time we were upset. It's a delicious biscuit from north Italy.

Serves: 6 

  • 600 g almonds, peeled and toasted
  • 500 g sugar
  • 250 g egg whites (about 7)
  • 30 g butter
  • 1/4 tsp cinnamon
  • 1 tsp vanilla essence

Preparation:30min  ›  Cook:40min  ›  Ready in:1hour10min 

  1. Chop the almonds finely.
  2. Whip egg whites to stiff peaks and add to almonds.
  3. Add sugar, cinnamon and vanilla.
  4. Pour in a saucepan and cook on low heat for about 20 minutes or until it doesn't stick to the pan, mixing constantly with a wooden spoon.
  5. Pour spoonfuls of the paste on a cookie sheet giving them an irregular shape.
  6. Bake on 130°C for about 40 minutes
