Easy Icing (For Cupcakes)

    Because I don't usually ice my little cakes, and I suggested icing as an option once they have been cooked, I thought that I would add an icing recipe - for anyone that needs it.

    Serves: 12 

    • 1 cup icing sugar
    • 20g butter (softened)
    • 1 tbsp boiling water
    • Now here's the fun part - depending on what flavour you made your little cakes can depend on what you want to add to the icing. Some suggestions (pick one or the other)
    • 1 tbsp lemon juice
    • 1 tsp cocoa powder
    • Lollies, to decorate
    • 1 tbsp orange juice
    • 50ml passionfruit pulp
    • 1 tsp vanilla, rum or peppermint essence

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Combine all ingredients in a bowl and mix well, until glossy and smooth. Make sure the icing is glossy and spreadable, not too thick and not so runny it drips off the cakes.
    2. Ice your cakes using a knife.
    3. If you are decorating after using the icing, do so before the icing sets entirely. For example, using lollies.
