"Subway" Cookies

    If you like your cookies soft but not floury, these are for you. You can vary the choc-chips - I love them with mini M&Ms or white chocolate chips and chopped macadamias. Bake them to desired crispness (they firm well when cooled).

    Serves: 18 

    • 175g butter, melted
    • 1 cup (220g) brown sugar, firmly packed
    • 1/2 cup (110g) caster sugar
    • 1 tablespoon vanilla essence
    • 1 egg
    • 1 egg yolk
    • 2 cups (300g) self-raising flour, sifted
    • 2 cups dark chocolate chips

    Preparation:15min  ›  Cook:15min  ›  Extra time:15min cooling  ›  Ready in:45min 

    1. Preheat the oven to 165 degrees C. Line two baking trays with baking paper.
    2. In a medium bowl, whisk together the melted butter, brown sugar and caster sugar until well blended. Beat in the vanilla, egg and egg yolk until light and creamy. Fold in the sifted flour until combined. Stir in the chocolate chips.
    3. Drop rounded tablespoons of the dough onto the prepared trays, leaving plenty of room for spreading.
    4. Bake for 15-17 minutes or until golden. Cool on trays for a few minutes before transferring to wire racks to cool completely.

    Something else. I let it cook undertime , to make it soft and i let it cool in the hot oven so it doesnt flatten like the first batch i made...  -  15 Jan 2011
