If you like your cookies soft but not floury, these are for you. You can vary the choc-chips - I love them with mini MMs, or white chocolate and macadamias. Bake them to desired crispness (they firm well when cooled).

Serves: 18
  • 2 cups (250g) self-raising flour
  • 170g butter, melted
  • 1 cup (185g) brown sugar, firmly packed
  • ½ cup (110g) white sugar
  • 1 tablespoon vanilla essence
  • 1 egg
  • 1 egg yolk
  • 2 cups dark chocolate chips

Preparation method

Prep: 10 minutes | Cook: 15 minutes | Extra time: 15 minutes
1.
Preheat the oven to 165 degrees celcius. Line two cookie trays with baking paper

Sift the flour, set aside.
3.
In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended.
4.
Stir in the chocolate chips by hand using a wooden spoon. Drop big, round tablespoons of the dough onto the prepared cookie trays, leaving plenty of room for spreading.
5.
Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

I used this recipe a dozen times now. I use 1/4 cup of white sugar instead and 1 1/4 cup of chocolate chips. Since I'm not a big fan of vanilla, I don't put any vanilla essence at all. I use a teaspoon shape the dough since I like smaller servings and bake for 11 minutes (at most) which is perfect for the chewy texture I want. As my sister puts it, these are "better than subway cookies". Thanks for the recipe!

I added some cocoa to the cookies. They turned out quite crunchy but had a nice flavour to them. I added 1 cup of chocolate chips too, I thought that was a good amount but 2 cups would be too much.

was so amazing! don't overcook though! they seem to look under-done after the 17 mins but when they cool they sink and become so amazing and just like subway cookies!!! Also i only used 1 cup of chocolate chips and it was more than enough (:

Mine turned out a little bit too crunchy - I guess I baked them too long so they didn't turn out like 'subway cookies'. But they're still delicious

Well,I gotta say..I don't know whether I cooked it the wrong way or smthng but I didn't get the 'subway' like cookies when I bake it..but i got 'mark and spencer' like cookies instead and it's definitely still yummy..

I'm very disappointed in these cookies! I wanted subway cookies, but I only got very bland cookies, which are definitely not worth the calories. Worst cookie recipe by far.
