Rainbow Pasta Salad

    This makes a nice big salad that tastes great - good for when you need to bring a plate or for potlucks. Leave at least an hour for the salad to chill and the flavours to develop.

    Serves: 8 

    • 500g coloured spiral pasta
    • 2 tomatoes, chopped
    • 1 green capsicum, chopped
    • 1 onion, chopped
    • 1 large cucumber, chopped
    • 1 cup broccoli florets (about a medium sized head)
    • 140g fresh sliced mushrooms
    • 250ml Italian salad dressing (bought or homemade)
    • 155g pitted and sliced black olives

    1. Bring 4 litres of water to a rapid boil (2 teaspoons of salt can be added, optional). Add the pasta. Return water to rapid boil and cook uncovered, stirring frequently, for about 10 to 12 minutes-according to packet directions. Drain. Rinse in cold water.
    2. Combine cooked pasta with tomatoes, capsicum, onion, cucumber, broccoli, mushrooms, olives and Italian salad dressing. Cover and chill for at least an hour. Toss salad before serving.
