    Dried apricots give these more-ish biscuits a tang.

    Ingredients
    Serves: 10 

    • 160g butter
    • 3/4 cup (185g) caster sugar
    • 1 cup (125g)self-raising flour
    • 1/3 cup (40g) plain flour
    • 1 1/3 cups (165g) chopped dried apricots
    • 2 tablespoons marmalade

    Directions

    1. Preheat oven to 180 degrees C. Line 3 trays with baking paper.
    2. Cream butter and sugar in large bowl with electric mixer.
    3. When light and fluffy, add marmalade, apricots and sifted flours.
    4. Roll mixture into 2 logs and wrap in cling wrap, chill 15 minutes.
    5. Unwrap and evenly slice into rounds 1/2 cm thick.
    6. Bake 15 minutes until golden.
    7. Cool on tray 5 minutes before transferring to wire rack.
