I have made these cupcakes several times. They always work out perfectly and taste amazing! I have included the ingredients and preparation for the decorations, but this makes the recipe more challenging.
Cupcakes: Preheat oven to 180 degrees. Line a 12 cup muffin tin with large patty cups.
Cream the butter, vanilla and sugar in a bowl with a hand mixer until light and fluffy.
Add eggs one at a time then beat until combined. Stir in half the sifted flour and half the milk, then stir in the remaining flour and milk. Fill the patty cups.
Bake for 17 minutes in preheated oven. Poke one cupcake with a skewer to ensure they are cooked through. If mixture sticks to the skewer continue to bake for another few minutes and retest. You don't want the cupcakes to peak then you will have to cut the top off to make them even.
Remove muffin tin from oven. Let rest for 5 minutes. Place on wire rack to cool.
Icing: Combine the icing sugar, butter, milk and a little hot water to create a smooth icing, add food colouring to get the desired colour. Alternately you can use a chocolate buttercream.
To Decorate: Ice the cake with the prepared icing or a buttercream.
Create the reindeer face by adding the round biscuit as the main feature. Above place the eyes.
Using the icing attach the red jelly bean as a nose.
Break the small pretzel snack into the shape of a reindeer antler, then add to the cupcake.
Finally squeeze half a Tootsi roll or similar in half and add as an ear to the cupcake, the repeat with the other half to complete the reindeer.
I make these all the time and decorate them according to the reason for making them. so easy and you can add cocoa or pop a chocolate in the bottom prior to baking to make them a little more special! - 03 May 2014
Delicious cupcakes! I made these for my daughter's school Christmas party. The kids loved them and all the adults commented on how cute they looked. Next time I'll have to make more than 12! - 10 Jan 2010
