    A great way to use whatever veggies you have in your refrigerator. If you want to take the time, make your own pie crust.

    Serves: 8 

    • 1 pre-prepared pie crust or flan case (23cm)
    • 3 eggs
    • 1 1/2 cups (375ml) milk
    • 1 tablespoon plain flour
    • 1 onion, chopped
    • 70g sliced fresh mushrooms
    • 1/4 bunch chopped fresh spinach
    • 1 small head broccoli, chopped into florets
    • 40g feta, crumbled
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground black pepper

    1. Pre bake the pie base for about 10 minutes if required.
    2. Meanwhile, in a mixing bowl, beat eggs with milk and flour. Stir in onion, mushrooms, spinach, broccoli and feta cheese. Season with salt and pepper. Pour mixture into the hot base.
    3. Bake quiche at 180 degrees C for 45 minutes to one hour. Quiche is done when knife inserted in centre comes out clean. Cover edges of the base with foil if they begin to brown too quickly.
