Cheats Kaltsounia- baked ricotta tarts from Crete, Greece

    I lived in Crete years ago for a couple of years, we used to buy these amazing little tarts at the local bakers for breakfast, but they are equally good for morning tea. They are so RIDICULOUSLY EASY to make if you cheat and buy the ready made pastry cases! Serve warm for optimal taste.

    Serves: 24 

    • 500g ricotta
    • 250g sugar
    • 2 tbs plain flour
    • 2 egg yolks
    • 2 tsp cinnamon
    • the zest of 1 orange
    • 24 pampas sweet pastry tart cases
    • small bottle cream on hand in case ricotta is dry (it usually is)

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Preheat oven to 180 degrees C
    2. Combine all ingredients in a bowl. If the mix is too crumbly and not creamy add some cream until its creamy but not too runny.
    3. Spoon filling into tart cases
    4. Bake 20-25 min until golden brown
    5. Nice to eat warm. You can reheat in microwave 10 seconds or in small oven or on top of a sandwich maker plate for a while
