Laura's Grandma's Peanut Butter Cookies

    Simple but perfect peanut butter cookies. They are completely egg and dairy free but still so delicious!

    Serves: 4 

    • 75g soft vegetable margarine
    • 50g peanut butter
    • 50g caster sugar
    • 50g demerara (or brown) sugar
    • 100g plain flour
    • Pinch of salt

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Blend margarine with peanut butter and then stir in the sugars.
    2. Stir in the flour to make a dough.
    3. Shape the mixture into 18 balls. Space them out onto baking trays and flatten each slightly with a fork (making a criss-cross pattern on the top).
    4. Bake each tray for about 15 minutes at 200 degrees C until pale brown.
    5. Leave to cool slightly before very carefully transferring them to a cooling rack.

    No too bad, I used Coconut Oil as a healthier alternative to Marg. and made a double batch. My first tray melted into tacky pancakes and burnt, so I added an extra 100g of flour and 1tsp of Baking Powder to the remaining mix. Each tray cooked in 10 min and they were much better! Almost like a nutty flavoured short bread  -  22 Aug 2013


    very yummy. We used crunchy peanut butter. Be careful with the cooking time, ours would have been done after about 10min.  -  28 Sep 2012
