Energy Cookies

    Everyone who tries these love them, has been a favourite of mine for many years.The best thing about these cookies is the taste changes with whatever you roll them in. Tip - you may need to add more flour to make it less sticky to roll. Take them out of oven when still a bit soft, is easy to over cook them.

    Serves: 20 

    • 150g soft butter
    • 1/2 cup brown sugar
    • 1 egg
    • 1 1/2 cups self-raising flour
    • 1/2 cup choc bits
    • 75g baking walnuts (optional)
    • coatings - coconut, sesame seeds, sunflower kernels, any crushed nut or try anything you like.

    1. Pre-heat oven 180 degrees C; grease or line a baking tray.
    2. Beat butter and sugar until pale and creamy.
    3. Beat in egg, then mix in flour to make a soft dough. Add choc bits and nuts.
    4. Take a heaped teaspoonfuls of mixture and roll into a ball.
    5. Now you can roll them in any of the coatings or do some of each.
    6. Place on tray 3cm apart, flatten with fork.
    7. Bake 12-15 min or until golden brown. Cool on rack.
