Lemon & Passionfruit Squares

All my friend's love this slice - it is known as "The Crowd Pleaser"!

Ingredients

100g butter
¼ cup icing sugar
1 cup plain flour
extra icing-sugar mixture to decorate

Topping
2 eggs, lightly beaten
2 tsp finely grated lemon rind
1 tbsp lemon juice
1 cup caster sugar
2½ tbsp plain flour
½ tsp baking power
Pulp of 1 passionfruit

Preparation method

1. Grease a 19cm x 29cm rectangular slice pan and line base with baking paper.
 
2. Beat butter and icing sugar in a bowl with an electric mixer until light and fluffy. Stir in sifted flour and mix well. Press mixture evenly over base of prepared pan.
 
3. Cook at 180 degrees C for around 20 mins or until lightly browned.
 
4. For the topping - beat eggs in a bowl until combined, stir in remaining ingredients.
 
5. Pour topping over base, return to oven, Cook for 25 mins or until top is crisp. Cool in pan. Cut slice into squares.
