    A nice Mexican-style egg dish with lots of veggies and tortilla strips cooked in. Great brekkie, brunch or easy dinner. Nice with salsa on the side too.

    Serves: 2 

    • 4 eggs
    • 1 small tomato, diced
    • 1/2 small onion, chopped
    • 1/2 green capsicum, chopped
    • 1 jalapeno chilli, seeded and diced
    • 2 tablespoons (40g) butter
    • 2 small corn tortillas, cut into strips
    • 1/2 cup grated Cheddar cheese

    1. In a large bowl, lightly beat eggs. Stir in chopped tomato, onion, capsicum and jalapeno.
    2. In a large frypan, melt butter over medium heat. Toss in the tortilla strips and cook briefly until soft. Add the egg and vegetable mixture and stir to combine. Cook, stirring occasionally, until eggs are set to your liking. Sprinkle with cheese and serve hot.
