White Christmas with a Cherry On Top

    Nice treat in the festive seasons for the little ones. Young or old everyone enjoys these. Wrap in coloured paper with ribbon for little gifts around dinner table.

    Serves: 12 

    • 250g Copha
    • 3 cups Rice Bubbles
    • 3/4 cup sifted icing sugar
    • 1 cup powdered milk
    • 1 cup dried fruit finely chopped
    • 1 pkt (100g) red glazed cherries finely chopped

    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. In large stainless steel bowl, combine dry ingredients (except the red cherries.) Melt copha slowly over low heat, cool slightly.
    2. Pour Copha into dry ingredients and mix well.
    3. Working quickly, spoon the mixture into paper patty cases or press into a greased lamington tin.
    4. Freeze until set about 15 mins then store in fridge.
    5. To serve cut into fingers if pressed onto tray and top with chopped red cherries.
