Slow Cooked Corned Beef/Silverside

It's winter time and I love the cooking channel. So I was thinking of ways to cook silverside. I was watching and was inspired to try something new.

Serves: 4 

  • 4 thick slices of silverside
  • 4-5 large potatoes or sweet potatoes/kumara
  • 5 carrots cut on the diagonal, if so desired
  • 4 cups (1 litre) beef stock (depending on the size of your crockpot)
  • salt & pepper to taste
  • 1 cup (250ml) red wine
  • 1-2 cans of tomatoes
  • herbs and seasoning to taste

Preparation:30min  ›  Cook:6hours  ›  Ready in:6hours30min 

  1. Preheat your slow cooker/crockpot and then put a square of butter in the bottom of the pot.
  2. Cut the uncooked/raw silverside into thick pieces and lay approx. 2 pieces on the bottom and them start adding your vegies layer by layer e.g. meat, then potatoes or sweet potatoes, then carrots (or any other veg. that you might like). Keep doing this until you run out of food & layers.
  3. Pour in the stock and wine and tomatoes and seasoning.
  4. Put the top on and set your timer on high for 6 hrs or on auto and let it cook until the meat is tender and falls apart, the vegies are done and the taste is outtasight.
  5. Serve with either a salad and fresh ciabatta bread to soak up all the juices at the end.
  6. The best thing about this recipe is that you can adjust it to suit yourself and it is ready when you come home from the office or a hard day out. It smells great and taste awesome. Enjoy.

I cooked this tonight, after 8 hours on high it still wasn't cooked enough. The veggies were hard. was not a fan, neither were the kids. - 03 Jun 2016
